Ice is an intricate part of the drink,  it dictates how much water is released during the time of consumption. The larger more condensed ice cubes melt slower, releasing water over time. Draft ice cubes (ice from our freezer) are thinner and melts very quickly. 
For example, a simple cocktail such as an Old Fashioned, is set to be simple with sugar, bitters and spirit. When one has a nice spirit in the glass it can diluted from the type of ice cube used.
